The Nicotera Severisio extra virgin olive oil comes out of a century-old family experience, obtained from 15.000 secular olive trees belonging to the extremely refined Carolea cultivar.

Its aroma is intense, recalling fresh grass and leaves; the taste is balanced, spicy and bitter in the throat, with a pleasing flavour of bitter almonds.
Its low acidity, its lightly fruity, fresh and decisive taste, its markedly bitter and spicy after-taste, make the Nicotera Severisio oil quite singular, ideal for making any dish noble and giving it character.

    • Sensorial Profile:  The oil expresses aromas of medium- high intensity due to the unripe fruit, characterized by the fragrances of cut grass, fresh almonds, thistles and a note of green tomatoes. On the palate there exalts a taste harmony centred on medium intense bitter tones, accompanied by a long lasting spicy perception. In the after smell grassy notes combined with thistles, bitter almonds and fragrant hints of radicchio are well evident. Overall, it can be appreciated for its freshness, cleanliness and the persuasive aromatic complexity, associated with a good smell and taste linearity and strong structure.
    • Use in the kitchen:  Ideal for the preparation of starters with a decisive taste, soups and minestrones. Excellent to accompany grilled meat, game, pulses, cheeses and bitter or grilled vegetables. Indicated for obtaining excellent fried foods and for use in cake- making.     • Sensorial Profile:  The oil exhibits a green fruitiness of medium intensity, accompanied by hints of grass, almonds and thistles. On the palate it expresses a good character with medium bitter taste together with a spicy perception of medium intensity and the correct persistence. The after smell remains the clear sense of grass, almonds and chicory. Overall the oil gives a good persistence, medium structure and an interesting aroma.
